Summer Lemon Gingerbread Sandwich Cookies

They're from the Bake at 350 blog.  She does some seriously amazing things with cookies and royal icing.  Have I mentioned that conquering royal icing is on my bucket list?  I haven't even tried yet.  Maybe this is where I start :).
